Hotelympia 2012 will welcome a wealth of leading names including celebrated chef Giorgio Locatelli, the UK’s best known restaurant manager Fred Sirieix, and revered food critic Fay Maschler – these inspirational industry figures will headline the Hotelympia Stage when the UK’s premier foodservice and hospitality event returns, 26th February – 1st March 2012, ExCel, London.
Traditionally a hub for show stopping insight, hard fought competitions and the meeting of minds, The Stage will yet again be the focal point for the five-day show, playing host to a number of fascinating one-on-one interviews, inspirational seminars, panel discussions, international competitions and awards ceremonies.
Sunday kicks things off in style with ‘Marketing the May Fair’. Consistently seen in the background of Paparazzi shots, used for video and photo shoots and featured in all the top glossy magazines, the spotlight is thrown on the people behind the publicity to give us an intriguing glance into how they stage-manage the hotel’s celebrity. Also on the bill is Ufi Ibrahim, Chief Executive of the British Hospitality Association, presenting its campaign for cutting VAT.
Monday will see Giorgio Locatelli talk about The Clink charity – an initiative to train people in prisons the art of cooking and front of house service allowing them to have meaningful employment opportunities when they are released.
Also scheduled for Monday is Fred Sirieix– General Manager at Galvin at Windows and star of Michel Roux's Service, who will be imparting his advice and offering tips on creating the perfect service. The man behind successful restaurant chains including Pizza Express and Giraffe, Luke Johnson, will also be on hand to talk about his businesses and the secrets to achieving and maintaining your own hospitality business.
Budding designers will not want to miss Martin Brudnizki who will be talking about the future of design. Martin is one of the industry’s most sought-after designers, both here and internationally. As well as discussing what lies ahead for the sector, he will also be talking about technique, inspiration, favourite projects and advising how to work successfully to schedules and budgets.
The day will be rounded off in some style with the presentation of the Hotelympia Design Award.
A Hotelympia first, the presentation will be the culmination of a nationwide search to find the UK's most outstanding hotel suite.
The glittering Design Award judging panel includes well known mother and daughter team, Channel 5’s Hotel Inspector Alex Polizzi and her Mother Olga, Director of Design for the Rocco Forte Collection, as well as Head of Design at Radisson Edwardian Hotels, Michael Attenborough, former Malmaison and Hotel du Vin CEO, Robert Cook, Chairman of the Interior Design Association, Stephan Oberwegner and former President of the British Institute of Interior Design, Jenny Gibbs. The hotly anticipated award will be kept a closely guarded secret right up until the unveiling, so a visit to the stage is strongly advised.
Tuesday’s big interview is with Britain’s most revered restaurant critic, Fay Maschler, who will be discussing the pleasures and the pitfalls of her profession. This Kingmaker of establishments will also be revealing why some restaurants succeed and others fail and giving useful business advice to budding restaurateurs in the audience. Fay also runs a restaurant consultancy so will be able to shed light on best practice, branding, concepts, sourcing products and pricing in what promises to be a sparkling encounter.
Hotels will also be top of mind on the Tuesday when Katy McCann, Global Head of Hotel Partnerships at the Mr & Mrs Smith Hotel Collection discusses the perfect recipe for creating a truly great guest experience.
The couple behind Hotel du Vin, Robin and Judy Hutson will also be in the speakers chairs and will be talking about past successes, design on a budget and how to keep customers coming in poor economic conditions. The couple will also be discussing their new luxury country hotel LIME WOOD and renowned concept hotel brand THE PIG.
Robin is also set to take part in a panel discussion with the current Hotelier of The Year, Stephen Carter and previous winner, Richard Ball. There will also be an audience Q&A that current and budding hoteliers are advised not to miss. The group will be discussing how to create and run the perfect hotel business.
On Wednesday and Thursday coffee will be the word on everyone’s lips as The Stage hosts no less than three championships.
The UK Coffee in Good Spirits Championship promotes innovative beverage recipes that showcase coffee, spirits and unique ingredients in a competition format. The barista’s mixology skills are put to the ultimate test as competitor’s present courses of Irish coffee and signature beverages to 2 judges. The drinks are then judged for taste, aroma, visual qualities and overall presentation.
The UK Latte Art Finals require a cool head and a steady hand, shining a light on the most intricate and beautiful latte art designs. Competitors each have to make two macchiatos, two cappuccinos and two speciality drinks in ten minutes. Each drink is decorated with free–poured latte art, while each pair of drinks is
also judged against a photo of the intended design that the Barista has to submit before judging.
Finally, The World Cup Tasters Championship awards the professional coffee cupper who can distinguish between the intricate taste differences in specialty coffees, while the UK Cezve Ibrik Championships celebrates coffee that is produced in the tradition of Greece, Turkey and the Middle East.
